Sweet Sensation

It was another busy yet fun filled day! Thanks to Steven Chang, I got an order for a graduation/farewell night event in Casuarina. I was overwhelmed with excitement when he told me yesterday night that there will be like 600 plus people present there. But nono, I wasn’t supposed to bake for all of them, just needed to prepare a small cake. I must say I’m pretty proud of myself – it’s nothing extravagant and rather simple actually but I think it’s beautiful 😉 Some pics to share…

Almond Cream
Simple Ordinary Vanilla Buttercream infused with bits of Almonds (great to ligthen up the sweetness of cupcakes and adding texture).

• 250g unsalted butter (room temperature)
• 250g icing sugar
• A handful of ground almonds (fine thinly chopped almonds)
• 1/2 cup of milk
• 1 tsp vanilla essence

1. Cream butter until smooth in an electric mixer with paddle attachment (takes up 2-3 minutes).
2. On low speed, add in 3/4 of the icing sugar, milk and vanilla essence and mix until light and fluffy.
3. Add in the ground almonds.
4. Gradually add in the icing sugar until your desired consistency is achieved.

The almond buttercream is now ready to be used as toppers for any of your favourite cupcake flavour! 🙂
